The big game is coming up this weekend and we are in full party planning mode. There are so many must-haves for the Super Bowl and these Baked Beef Flautas totally made the list. So easy to prepare and baking them is absolutely a must for a party. No greasy mess and they’re all done and ready to go at the same time – yay for ovens!
The tortillas bake up so nice and crispy you won’t even miss the frying – promise!
I used ground beef for this recipe and seasoned them with taco seasoning. Fajita seasoning would also be delicious! By the way, this recipe also works with chicken. Just shred and season and you’re good to go.

We made up our favorite queso dip because duh, these flautas need to be dipped for sure! Just two ingredients – RO*TEL and VELVEETA – ensure a creamy, easy, and delicious queso that everyone loves.

I used fajita sized tortillas and cut them in half so they’re the perfect size for dipping in the zesty queso. If you have larger tortillas you may want to cut them into thirds.
Once the queso dip is all melted and ready to go, I put it in a small slow cooker to keep it warm for the entire party. Plus, my boys will want to dip every single appetizer served into this queso so using the slow cooker ensures that it’s always ready for them 🙂

How To Make Flautas
Baked Beef Flautas with Queso Dip

Flautas
- 1 pound lean ground beef
- 1/2 onion diced
- 1 tablespoon taco seasoning
- 1/2 cup water
- 10 soft taco or fajita size tortillas
- olive oil
Queso Dip:
- 10 ounces Ro*Tel® Original Diced Tomatoes & Green Chilies undrained
- 16 ounces Velveeta cut into 1/2-inch cubes
Instructions
Preheat oven to 425°F.
Brown ground beef in a medium-sized pan over medium-high heat.
Stir in onion and continue sauteing until onion is nice and translucent, 3-4 minutes.
Stir in taco seasoning and water. Bring to a simmer and let simmer for 6-8 minutes or until liquid has evaporated.
Spray a large baking sheet with cooking spray and set aside.
For each flauta, spoon about 3 tablespoons of the beef mixture onto a tortilla.
Roll each tortilla up tightly and place seam-side down on baking sheet.
Continue assembling flautas one at a time until you’re done.
Once all flautas have been assembled, spray the tops of each with additional cooking spray or brush lightly with olive oil.
Bake for ten minutes, flip flautas over, and bake for five additional minutes. They should be a nice golden brown.
While flautas are baking, prepare the queso dip.
Combine can of undrained tomatoes and Velveeta in medium saucepan.
Cook over medium heat 5 minutes or until Velveeta has melted completely and mixture is blended, stirring frequently.
Serve flautas with warm queso dip.
